Ham & Cheese Pancakes Recipe
A savory pick-me-up featuring gooey gruyère and smoked ham. Serve these pancakes for brunch or a light supper; they are true comfort food.
Ingredients
- 100g plain flour
- 1 beaten egg
- 200ml full-fat or semi-skimmed milk
- ½ tbsp vegetable oil, plus extra for frying
- 30g butter
- 80g smoked ham, diced
- 80g gruyère, grated
- Small handful of chives, snipped
Method
Step 1:
In a bowl, combine the flour and ½ tsp salt. In another bowl, mix the egg with the milk and oil. Gradually pour this mixture into the dry ingredients, whisking constantly until a smooth batter forms. Transfer the batter to a large jug.
Step 2:
Heat a large, non-stick pan over a gentle flame with a little oil swirled around. Pour a quarter of the batter into the pan, tilting it to cover the base. Cook for 1 minute, then flip and cook for another 30 seconds. On one half of the pancake, add ¼ of the butter and sprinkle with ¼ of the ham and cheese. Grind some black pepper over the top and fold the pancake over the filling. Fold it in half again and place on a plate. Repeat the process to create four pancakes. Serve with scattered chives.
