Ingredients:
- 100g melted butter
- 2 eggs
- 1 tsp vanilla essence
- 1 cup of white sugar
- ¾ cup of flour
- ¼ cup cocoa
- 1 tsp of baking powder
- Optional: 80g milk chocolate chips
Method:
1. Melt the Butter: Cut the butter into pieces, place it in a 20x20 cm microwavable dish, and microwave in 20-second bursts until fully melted. Swirl the melted butter around to coat the dish, then transfer it to a mixing bowl.
2. Mix Wet Ingredients: Add the sugar to the melted butter and whisk until creamy. In a jug, combine eggs, vanilla essence, and milk. Gradually whisk this mixture into the butter and sugar, ensuring it is fully incorporated.
3. Incorporate Dry Ingredients: Sift the flour, cocoa, and baking powder together. Fold gently into the wet mixture. If desired, add milk chocolate chips at this stage for extra indulgence.
4. Cook in Microwave: Pour the batter into the butter-coated dish, spreading evenly with a spatula. Microwave on high for 4-6 minutes until the brownies are risen and slightly firm to the touch. They will continue to cook once removed from the microwave.
5. Cool and Serve: Let the brownie cool in the dish for at least 20 minutes. Cut into squares and serve warm, ideally with ice cream or cream.
These brownies can be stored in an airtight container for up to three days.
