Using leftover rice to make a delicious dish with eggs and vegetables, just like in a Chinese restaurant

A prerequisite is to use long-grain rice.
If desired, the dish should be garnished with finely chopped green onions.
Recipe for cooking rice like in a Chinese restaurant
1. Prepare all the ingredients.
2. Put the carrots in a saucepan and cover with water.
3. Cook the carrots over low heat after boiling for about 5 minutes.
4. Add the green peas and immediately drain in a colander.
5. Turn on the wok over high heat and add 2 tbsp of oil.
6. Then add the vegetables: carrots, peas and garlic; cook for about 30 seconds.
7. Add 2 eggs and quickly mix with the vegetables.
8. Stir in the cooked rice.
9. Add soy sauce (1 tbsp) and stir to coat the rice.
10. Drizzle with oil (preferably sesame oil) and stir again.
11. Add a clove of garlic if desired.
12. Serve the dish hot.
Tips for cooking rice with vegetables
- The recipe may also include other vegetables: bell peppers, broccoli, cauliflower, asparagus, peas, and white cabbage.
- Cook the dish in one skillet.
- Cold rice cooked today or yesterday is fine.
- The egg can be fried in the same pan, pushing the vegetables to the side. It is better if the vegetables are slightly soft.
- Jasmine or long-grain rice is the most commonly used type for this recipe.
- For best results with fried rice, cover and chill the rice for eight hours to overnight before using it in this recipe.
- For an authentic flavor, use sesame oil.
- Soy sauce is your best friend.
How to cook rice properly
If you don't have any leftover rice, the best way to cook it is to mix four cups of water and two cups of white rice in a saucepan. Then bring to a boil and reduce the heat.
Cover and cook until the rice is tender and the water is absorbed.
Remove from heat and let cool to room temperature.
