Follow the two-hour rule
Refrigerate or freeze all perishable foods within 2 hours of serving, or within 1 hour if the temperature exceeds 32 degrees Celsius. Any food left at room temperature beyond this timeframe should be discarded to prevent potential food poisoning.
Use clean dishes and utensils
Before handling any prepared food, especially items destined for the refrigerator, ensure your hands are washed with soap and water. Always utilize clean utensils and store leftovers in thoroughly washed containers. Avoid placing food back into the same container it was in before cooking unless it has been properly cleaned.
Store food in small and shallow containers
After the party, transfer chilled or frozen foods into small, shallow containers, no more than 7-8 cm in height, and seal them tightly. Maintain space between containers to facilitate faster cooling and inhibit bacterial growth.
Consume leftover "holiday" food within four days
Attempt to consume holiday leftovers within the following three to four days to prevent frozen foods from losing flavor and texture. To eliminate harmful bacteria, ensure leftovers are heated to an internal temperature of 74 degrees Celsius.
Repurpose food
Feel free to experiment with leftovers. If you're tired of consuming them in the same manner, try incorporating them into new dishes or pairing them with other foods. This approach can enhance your enjoyment of the food and help you consume it more efficiently, without compromising your health.
