HuffPost writes, "You may not be so wrong, but this problem has a simpler explanation. Moreover, you can solve it simply by crumpling the foil when frying food over high heat."
"Any time you're frying and want to limit the amount of smoke in your kitchen, this is the most effective method," America's Test Kitchen reports.
How does it work?
Crumple the foil into a ball before placing it on a rimmed baking sheet, and if you're roasting something large, add a wire rack. However, for smaller foods, you may not need it
This works because the air pockets in the crumpled foil increase air circulation under the dish, especially if a wire rack is placed on top of it.
In addition, this technique allows grease and drippings to fall on a cooler and uneven surface, which prevents smoke from forming.
It is also believed that if you cook fries in this way, the additional air circulation gives them a pleasant crunch and also prevents food from sticking to the baking sheet.
"Before cooking chicken nuggets, frozen potatoes, etc., cover the foil with starch. This makes it easier to flip and helps the food not stick. I discovered this by accident," one Reddit user shared.
