The first concerns the temperature of the ingredients you add to the dough. Yeast and dairy products should be removed from the refrigerator at least two hours before you start cooking. This will help the dough rise perfectly.
Don't forget to activate the yeast, regardless of whether you use dry or baker's yeast. It is recommended to combine them with a little sugar and warm milk. It is important that the last ingredient is not hot. High temperature "kills" the yeast, so it does not rise.
The second rule is to remember the order of adding the ingredients. You should start by whipping margarine or butter with sugar. The mass should be fluffy, light, and airy. Whipping should last at least 5 minutes to achieve the perfect result.
Only then can you add dry ingredients. Some chefs recommend putting the sifted flour in an oven preheated for 30 minutes to avoid constipation during baking. Then gradually add the flour to the butter mixture. This will make the cake light and fluffy, and retain moisture inside.
