When cooking a delicious barbecue outdoors, you should also pay attention to the condition of the firewood and its appearance. Don't use rotten or decayed wood for the grill. They will not burn well, and therefore will not be able to produce enough heat for perfect roasting.
Do not use painted wood either, as it can release hazardous substances when heated. They will not only spoil the meat, but will also be harmful to your health. Wet bars are also not suitable - not only will they not produce enough heat, but they will also emit soot and too much smoke.

Fruit trees are considered the best for grilling, although birch or oak are also suitable:
- Apricot - if you take at least a little wood from this tree, the kebabs will get interesting almond flavor notes. Also, such wood burns for a long time and leaves little ash, so you won't have to clean the grill later.
- Apple tree - thanks to its dense wood, it does not leave too much ash after burning, and the meat will be filled with exotic fruit notes.
- Pear - also adds an interesting fruity flavor, as well as a lot of heat, while the meat will not be dry after cooking on such wood.
- Cherry - this kind of wood burns for a very long time, so you can fry several portions without tossing the wood.
- Oak - adds a light smoked flavor to the meat, and the wood burns for a long time, so you don't have to worry if you have a lot of barbecue.
- Linden - it is used only when frying young meat (in particular, veal). Then it will help to enhance the flavor of the dish.
