Green shakshuka: a recipe for a healthy breakfast

Shakshuka is a dish made from eggs, popular for breakfast in Israel, but equally delicious for lunch or dinner. This variety is prepared with spinach and jalapeño. SSPDaily tells about it.
1. Preheat the oven to 180 degrees Celsius.
2. Heat olive oil in a large ovenproof skillet over medium heat. Add the onion and sauté until soft for 4-5 minutes. Then add the garlic and jalapeños and sauté until fragrant for another 1 minute.
3. Add the spinach and cook, if using fresh, for 4-5 minutes until it is completely wilted, or if defrosted, for 1-2 minutes until warmed through.
4. Season with cumin, coriander, salt, pepper, and harissa. Cook for about 1 minute, until the aroma is released.
5. Transfer the mixture to the bowl of a food processor or blender and purée. Add the broth and purée until thick and smooth.
6. Wipe down the skillet and coat with nonstick cooking spray. Pour back the spinach mixture and make eight wells with a wooden spoon.
7. Carefully crack the eggs into them. Transfer the skillet to the oven and cook until the egg whites are completely set but the yolks still wobble a bit, 20-25 minutes.
8. Sprinkle the shakshuka with parsley, cilantro, and red pepper flakes to taste. Serve immediately.
