These fingerling potatoes are a fantastic accompaniment to grilled steak. A touch of garlic and grilled lemon juice elevate these potatoes, making them my preferred starch for any grilling dinner. SSPDaily prepared a delicious recipe for an irresistible side dish.

Ingredients:
- 2 1/2 teaspoons of salt
- 1 1/2 pounds of fingerling potatoes
- halved lengthwise
- 1 tablespoon of olive oil
- 1/4 teaspoon of black pepper
- 1/4 teaspoon of granulated garlic
- 1 lemon, halved
- 1 tablespoon of chopped fresh Italian parsley
Method:
1, Ensure that the grill is ready with a two-zone fire, creating medium-high heat ranging from 375º to 425º F.
2. In a large pot on the stovetop, bring 2 quarts of water to a boil. Add 2 teaspoons of salt and the sliced potatoes to the boiling water. Cook until the potatoes are tender and easily pierced with a knife, usually around 6-9 minutes. Drain the potatoes in a colander and set them aside.
3. Transfer the parboiled potatoes to a bowl. Toss them with olive oil, the remaining 1/2 teaspoon of salt, black pepper, and granulated garlic.
4. Place the potatoes cut side down on the grill, directly over the heat. Grill until they become lightly charred, approximately 3 minutes. Flip the potatoes and grill for an additional 3 minutes. Simultaneously, grill the halved lemon, flesh side down, until it gets beautifully charred, roughly 3 minutes.
5. Remove the grilled potatoes and lemon from the heat. Transfer the potatoes to a bowl. Squeeze the grilled lemon juice over the potatoes and give them a gentle toss. Lastly, garnish with freshly chopped Italian parsley and serve.
