Classic Easter pastries take a long time to prepare. Most of the time is spent kneading the dough and making the mother dough. If the dough is not kneaded well enough, it may not work, and the Easter cake will fail. But it turns out that you can make Easter cake bypassing this stage with a simple and quick recipe. Despite the fact that it is not kneaded as usual, the "lazy" Easter cake is airy, soft, and does not get stale for a long time.
Ingredients for making "lazy Easter cake":
- 350 g of wheat flour,
- 2 eggs,
- 150 g of sugar,
- 150 ml of milk,
- a sachet of vanilla sugar,
- a pinch of salt,
- 10 g of dry yeast,
- 100 g of butter,
- 150 g of candied fruit, dried fruit or raisins,
- lemon zest.
How to make Easter cake without kneading the dough:
- Mix yeast, sugar, and a little flour. Pour warm milk over the mixture, stir with a spoon, and leave for 10 minutes. When bubbles appear on the surface, the yeast is activated and ready to bake.
- Heat the butter to soften it. Add the eggs and sugar and salt. Stir the mixture until smooth.
- Combine the yeast mixture with the butter mixture and mix. Then gradually add the sifted flour. Add enough flour to make the consistency of the mixture resemble thick sour cream. The dough is ready
- Cover the dough with cling film and leave it to rise for two and a half hours. The volume of the dough should increase significantly, then stir it with a spoon.
- Pre-pour boiling water over dried fruits, candied fruits or raisins and leave for 10 minutes. Then drain the water, dry them with a paper towel, and add them to the dough.
- Spoon the dough into the molds so that it covers a third of the mold. Cover the molds with a towel and leave them to rise until the dough has grown to cover 3/4 of the mold. This process will take at least 40 minutes.
- Bake the "lazy" Easter cake in the oven for about 30 minutes at 180 degrees.
- After baking the cake, when it has cooled down, apply the icing.
