It's essential to use only short-grain rice for this recipe. This type of rice has a high starch content and absorbs water well, preventing the patties from falling apart during cooking. Short-grain rice makes it easy to shape the patties.
Ingredients for making vegetarian rice patties
- Short-grain rice - 150 g uncooked or 400 g cooked rice.
- One medium-sized carrot.
- One onion.
- Salt - half a teaspoon.
- Parsley - 5 sprigs.
- Breadcrumbs - 2 tbsp.
- Cooking oil - 5 tbsp.
How to prepare vegetarian rice patties
- Rinse the rice thoroughly under running water, then place it in a saucepan and add 300 ml of water. Bring the water to a boil, reduce the heat, and simmer with a half-covered lid for 20 minutes. Transfer the cooked rice to a separate bowl and let it cool to room temperature.
- Peel and dice the onion and grate the carrot.
- Wash the parsley sprigs, pat them dry with a paper towel, and finely chop them.
- Heat a frying pan, add two tablespoons of oil, and sauté the diced onion for 5-6 minutes. Add the grated carrots to the onion and continue cooking until the carrots are tender.
- Combine the fried vegetables and chopped parsley with the cooked rice, transfer the mixture to a blender bowl, and blend until smooth. Add half a teaspoon of salt and mix well.
- Shape the mixture into oval patties and coat each patty with breadcrumbs.
- Heat three tablespoons of oil in a frying pan and fry the patties until golden brown, about 2-3 minutes on each side.
- Place the cooked patties on a paper towel to absorb excess oil. Serve warm with your favorite sauce.
This recipe yields 6-8 patties, depending on the size.
This is a basic recipe for vegetarian rice patties. There are many variations you can try. For example, you can add grated potatoes to the mixture. Grate the potatoes like pancakes and combine them with the "minced rice," onions, carrots, and herbs.
You can also incorporate mushrooms. For 150 g of raw rice, use 200 g of raw mushrooms. Slice the mushrooms, sauté them in a pan, and blend them with the rice in a blender.
Feel free to experiment with different herbs like dill, green onions, or omit them altogether.
