Step one: make a special salt mixture
Cooking crispy wings according to Matt Preston's recipe starts with creating a special mixture of three parts salt and one part baking powder to coat them with. Matt explains: "This one activates the amino acids in the skin and makes it crispier."
Step two: Refrigerate the wings overnight
The next step in cooking is "overnight chilling".
After you coat the wings with a mixture of salt and baking powder, place them on a baking sheet and refrigerate overnight, uncovered. "The cold air will dry out the skin even more and allow the baking powder to do its job," says Matt.
Step 3: Cook them in an air fryer
This dish is cooked on high heat (200C) for 25 minutes, which Matt believes is the perfect temperature and time to get crispy and juicy wings.
As for the sauce, the chef believes that there is nothing better in this regard than a mixture of butter, hot sauce and rice wine vinegar.
"Pour it over the crispy wings," says Matt, "and be transported to culinary heaven.
