The Guardian interviewed Patricia Michelson, the owner of a cheese shop in London, to get insights into this topic. She explained that while some types of mold contribute to the unique flavor of expensive cheeses, it's not desirable for a block of cheddar to turn green. According to Patricia, cheese can spoil quickly if not stored correctly, even in the refrigerator. However, she shared some guidelines to prevent this issue.
One of her tips involves using sugar cubes for cheese storage.
Specifically, she advised, "Always wrap the cheese twice—in wax paper or baking parchment—and place it in a plastic container lined with a damp kitchen towel or J-cloth."
"After that, place two whole sugar cubes in it, close it, and put it in the refrigerator."
"The sugar cubes regulate the humidity inside the box, prolonging the 'life' of the cheese."
Patricia suggested keeping the container on the top shelf of the refrigerator, where the temperature is better regulated.
She also mentioned, "The cubes will melt over time and should be replaced if the cheese has not yet been eaten."
"I hope you ate the cheese before this happened. If not, wipe out the container, replace the damp cloth, and put the cheese back in with two new sugar cubes."
While this method is effective for hard, savory cheeses, it may also be suitable for softer varieties.
