The fact is that if you cover the soup with a lid, the boiling of the liquid becomes more violent. This causes the suspension to rise and, as a result, the soup becomes cloudy and loses its appetizing appearance.
That is, according to experts, the soup should be cooked with the lid open. However, this rule should not always be followed. There are exceptions.
In particular, if you add any meat component to the soup, it should be heat-treated only under a closed lid. Otherwise, the meat will not acquire the necessary softness, will be too tough, which will worsen the taste of the whole dish.
But once you've added vegetables to the meat, you don't need to put the lid back on. Now it should be cooked in the open.
Also, soups that need to be thick should be cooked under the lid. For example, cream soups are popular today. But if you add only vegetables and fish to the soup, you should not cover it with a lid.
